Welcome to What’s Cookin’ – HTA’s newsletter highlighting the programs, people, and partnerships at the heart of our work. Through deep relationships with employers, educators, and community-based organizations, we help people move from poverty to economic independence by opening pathways to life-changing careers in the hospitality and food service industry.

As our nation prepares to celebrate Independence Day, we are reminded of the importance of opportunity, hard work, and community. Apprenticeship Graduation

We celebrated National Apprenticeship Week and our 2026 Registered Apprenticeship Graduation on the USC Campus, welcoming a full house of community leaders, HTA staff and instructors, family, and friends. We highlighted the transformative power of Registered Apprenticeships to provide economic opportunities for under-resourced people and build our hospitality workforce, and lifted up 50 new graduates of our Line Cook and Barista/Latte Artist programs as certified Apprentices.

HTA Staffs Up World-Class Sports & Entertainment Venues
It has been a busy season partnering with Legends Global to welcome thousands of jobseekers pursuing culinary and hospitality opportunities at some of Southern California’s premier sports and entertainment venues: SoFi Stadium, the state-of-the-art sports and entertainment complex in Inglewood; the waterfront destination Long Beach Amphitheater; the historic Los Angeles Memorial Coliseum; and the open-air soccer and entertainment hub, BMO Stadium.

We’re proud to provide opportunities that offer career pathways to people across Los Angeles and help build our vibrant hospitality workforce. During these events, we served more than 3,000 jobseekers who brought incredible energy and determination as they pursued union hospitality jobs and long-term career pathways – and more than 2,000 participants received job offers.

On May 6, HTA Executive Director Adine Forman was honored by the Los Angeles Alliance for a New Economy (LAANE) at their annual Women for a New Los Angeles luncheon. Adine was recognized for her deep commitment to advancing economic justice, elevating working conditions in the hospitality sector, and designing national best practices in workforce development across her 30-year career. She has been a driving force in creating pathways to economic mobility and opportunity for marginalized and vulnerable communities, and exemplifies the luncheon theme “Architects for Change.”

HTA Advocates for Support in Sacramento
HTA made several trips to Sacramento to meet with legislators about our industry-leading workforce development training programs that provide life-changing career pathways to good union jobs with benefits. Together with our partners at Building Skills Partnership, we emphasized the need for continued investment in  high-road labor-management partnerships that lift up people from marginalized communities and strengthen our regional economy – especially as we build and train the hospitality workforce for the World Cup, Super Bowl, and the Olympic and Paralympic Games coming to Los Angeles. Meet Master Mentor:  Chef Danny Harold

Meet Master Mentor:  Chef Danny Harold
HTA Culinary Instructor, Chef Danny Harold, has been in the culinary industry for over 35 years. Before joining the HTA, he was the Executive Chef at The Grill on the Alley and founder and owner of Harold Catering, where he served President Barack Obama, major entertainment studios and served as Bruce Springsteen’s private chef. Chef Harold has taught at the International Culinary School at the Art Institutes and is a member of the James Beard Foundation. Since 2017, Chef Harold has trained thousands of students and incumbent workers, mentored instructors, and helped grow HTA into a nationally recognized program.

“Going through the HTA program was great. They gave me a lot of opportunities to better myself. As someone who was formerly incarcerated, there were a lot of hurdles I needed to jump through, and HTA was right there at every step to guide me. A lot of what I have accomplished in this part of my life, would not have been possible without this program. It changed my life. And now, working at UCLA Dining Services – a job I thought was off the table given my background – having a good job with benefits, healthcare and a pension is such a blessing.”

A Message from Adine Forman, Executive Director

Welcome to What’s Cookin’ – HTA’s newsletter highlighting the programs, people, and partnerships at the heart of our work. Through deep relationships with employers, educators, and community-based organizations, we help people move from poverty to economic independence by opening pathways to life-changing careers in the hospitality and food service industry.

As we close out the year, we find ourselves reflecting with deep gratitude. This is a time to take stock and appreciate the power of community — the simple but essential act of showing up for one another. At HTA, we are proud of the work we do every day to help individuals build skills, confidence, and stability, and to support families and communities during moments that matter most. In 2025, we trained and placed more than 170 people into life-changing jobs—that includes 107 prep cooks, 43 line cooks, and 24 baristas.

Thank you for being part of the HTA community. Your partnership, generosity, and belief in our mission make this work possible. We wish you a warm and meaningful holiday season, and we look forward to continuing this important work together in the year ahead.

Graduates of our Line Cook Registered Apprenticeship Program gather at the HTA Kitchen in Koreatown every month to expand their skills. In the Middle East Cuisine class, Apprentices explored Arab, Iranian, Israeli, Assyrian, Lebanese and Turkish recipes and prepared a trio of dips – Muhammara/Red Pepper Walnut Dip, Baba Ganoush and Hummus, Falafel, Dolmas/Stuffed Grape Leaves, Chicken Machboos, Simit Kebab/Ground Lamb Skewers with Bulgar, Ramadan Pide Bread and Baklava for dessert.

HTA Instructors Inspire the Next Generation

HTA Instructors Inspire the Next Generation
HTA Culinary Instructor Rogelio Diaz joined a career panel at Garfield High School’s Pathways Apprenticeship Fair, moderated by the Los Angeles County Federation of Labor, AFL-CIO Deputy Director of Outreach and Civic Engagement Devin Ablard. Pathways is a new initiative from the Miguel Contreras Foundation and the Federation, which connects high school students to quality union careers.

Addressing the assembly of 150 high school students, Chef Rogelio shared his own trajectory, as a graduate of HTA’s Chef de Partie apprenticeship program, now serving as a Culinary Instructor – always mentoring and inspiring the next generation of cooks and chefs. HTA Outreach Manager Socrates represented the HTA at the Apprenticeship Fair, sharing information about our transformational training programs that offer career pathways to good union jobs. Onward!

City of LA LOGOHTA to Serve Survivors of Domestic Violence and Foster Youth Through City of Los Angeles Guaranteed Income Pilot Program

HTA is proud to partner with the City of Los Angeles on its guaranteed income pilot program to serve survivors of domestic violence and foster youth. The Los Angeles City Council has allocated $2 million for the program, which will provide $1,000 per month for two years to survivors of intimate partner violence and to current or former foster youth aged 16-24. HTA and Marriott Mobilize Emergency Meals Program for  Eaton Fire-Affected Community
HTA, in collaboration with Marriott International, mobilized a 10-week Emergency Meals Program between April and July for Pasadena and Altadena community members experiencing long-term displacement and economic impact from the Eaton Fire. With support from American Express, HTA and Marriott staff prepared and distributed over 10,000 meals to community members at weekly drive-thru pick-up events at the Pasadena Church East Campus, and delivered 1,800 meals to faculty and staff at five schools in the Pasadena Unified School District - Alma Fuerte Public School, Aveson Global Leadership Academy (AGLA), Aveson School of Leaders (ASL), Don Benito Fundamental School and Pasadena Rosebud Academy.

HTA is invested in the long-term success of our alumni. Every month, graduates of our Line Cook Registered Apprenticeship Program gather at the HTA Kitchen in Koreatown to expand their skills. In our recent Thai cuisine class, Apprentices prepared an array of specialties including Pad Thai, Thom Kha Gai (sour coconut and galangal soup with chicken), Pad Ke Mao Gai (drunken noodles with chicken) and Som Tum (green papaya salad). HTA Awarded Los Angeles County Grant to Meet Growing Demand for Hospitality Workers
HTA is proud to be a grant recipient of the Los Angeles County Department of Economic Opportunity’s High Road Training Partnerships (HRTP) Fund, which supports innovative workforce training models developed through partnerships between worker-centered organizations and employers to advance equity, sustainability, and job quality. This $1 million award will fund Culinary Pathways: A High Road to Opportunity, a partnership between HTA and UNITE HERE Local 11, and will strengthen our best-in-class training programs to meet the rising demand for skilled Line Cooks, Bartenders, Baristas, and Prep Cooks across the hospitality, tourism, and food service industries—sectors poised for growth with the 2026 World Cup, 2027 Super Bowl, and 2028 Summer Olympics and Paralympics.

It was a pleasure to welcome Representative Laura Friedman to the HTA Kitchen and introduce her to our inspiring culinary students, exceptional instructors, and staff, and thank the Congresswoman for her leadership. Students in our Prep Cook English Language Learner (ELL) class from Cuba, El Salvador, Mexico, Peru, Spain, and beyond, and alumni from our Line Cook Registered Apprenticeship Program shared their stories about coming to the HTA, mastering classic culinary techniques, fielding job offers, and how our program is transforming their lives.

HTA Offers SafeServ Classes on Food Safety
At HTA, food safety is central to our training programs. Every day, we teach responsible practices that underscore the critical role food operators play in protecting public health. To support this effort, HTA offers the ServSafe California Food Handler Class and Certification Exam—required for all food-handling workers in California—which equips students with the knowledge and skills to safely prepare and serve food, reducing the risk of foodborne illness. HTA was proud to participate in the empowering Non-Violent Direct Action Training at the Los Angeles Convention Center, hosted by the Los Angeles County Federation of Labor, AFL-CIO (Labor Fed). We joined 1500+ union members, elected leaders, including Mayor Karen Bass, LA City Councilmember Hugo Soto-Martinez, advocates, and activists, in standing up for our communities. Special thanks to the Federation for organizing this powerful gathering and to HTA Board Chair Susan Minato for her leadership in making it possible.

HTA Expands Culinary Training Program with Launch of New York City Culinary Education Center
In 2023, HTA received a Critical Sectors Job Quality Grant from the U.S. Department of Labor to expand our program in key hospitality markets nationwide, including New York/New Jersey —sectors crucial to economic growth, post-pandemic recovery, homelessness prevention, and providing low-income, marginalized individuals with good union jobs offering living wages and benefits. In July, HTA subgrantee, the Culinary Education Center, opened its doors in the Bronx and launched its first Line Cook Registered Apprenticeship Program. Congratulations to our colleagues in New York City and to the first cohort of students experiencing this transformational opportunity!

An immigrant from Honduras, Cristina was one of more than two thousand workers displaced by the closure of the 2022 Farmer John meatpacking plant in Vernon. She and her daughter Genesis, graduated from HTA’s Spanish Line Cook Registered Apprenticeship Program and were hired at USC – together! “Thank God I got this training and found the HTA. I have a better-paying job, better benefits, and the HTA helped me find employment at USC. All of the instructors and my classmates have been so helpful, and I am very happy to be cooking as my job.”

Welcome to What’s Cookin’ – HTA’s newsletter about the programs, people, and events at the heart of what we do. Through robust partnerships with employers, educators, and community organizations, we help people move from poverty to economic independence by opening pathways to life-changing careers in the hospitality and food service industry.

As we prepare to celebrate Independence Day, we’re reminded of the richness of our nation’s diversity—and of the belief that everyone deserves the freedom to dream and the opportunity to achieve. County of Los Angeles and HTA Celebrate National Apprenticeship Day
In honor of National Apprenticeship Day, the HTA, Los Angeles County Department of Economic Opportunity (DEO), and LA County Supervisor Holly J. Mitchell hosted a special event honoring HTA’s Line Cook Registered Apprenticeship graduates, who have completed approximately 2,000 hours of on-the-job training and are now fully certified Line Cook Apprentices. We celebrated the transformational power of Registered Apprenticeships to provide economic opportunities for underserved communities and build our hospitality workforce. Family and friends of the graduates joined the festive gathering, as well as valued employer partners from USC, CREWS of California at LAX, HMS Host, The Sheraton Grand Hotel, and Concord Collective.

Meet Culinary Captain: Chef Mitchell Frieder
Chef Mitchell Frieder, Director of Food and Beverage Training, has been at the cutting edge of culinary education for over twenty years, and is one of only two recognized subject matter experts in Culinary by the U.S. Department of Labor. Before joining the HTA, he was a Chef Instructor at the International Culinary School at the Art Institute, Le Cordon Bleu, and Le Gourmet Culinary. Since 2015, Chef Mitchell has designed our nationally recognized curricula, trained thousands of students and incumbent workers, mentored our team of instructors, and built strong partnerships with employers.

We are invested in the long-term success of our alumni. Graduates of our Line Cook Registered Apprenticeship Program gather at the HTA Kitchen in Koreatown every month to expand their skills. In our Pasta Making Class, apprentices hand-crafted pasta dough and mastered the techniques to produce fettuccini, cavatelli, tortellini, and an array of delectable sauces. And in our Vegan Cuisine Class, they learned to prepare vegan sausage, green goddess dressing, turmeric, tahini, and more!

HTA Hosts Breaking Barriers Grantee Roundtable
HTA is proud to be a recipient of the Breaking Barriers to Employment grant from the Foundation for California Community Colleges and the California Workforce Development Board. We recently had the honor of hosting a roundtable at HTA headquarters with fellow grantees, sharing ideas and learning from one another. This initiative supports innovative strategies to address racial, ethnic, and socioeconomic disparities in the labor market. Through our POWER partnership, we uplift individuals facing systemic barriers to employment, including formerly incarcerated individuals, survivors of domestic and community violence, immigrants, English language learners, adults over 50 seeking retraining, and women entering nontraditional fields.

During the pandemic, HTA partnered with UNITE HERE Local 11, leading hospitality employers, and local government to produce and deliver 4.8 million meals to more than 10,000 seniors and unhoused individuals across LA County, while also providing over 1,100 jobs for UNITE HERE Local 11 members and delivery drivers. In May, HTA participated in WORKCON 2025—Strength in Change: Resilience for the Future, the California Workforce Association’s annual conference for workforce practitioners. We presented a workshop on Employer-Led Workforce Strategies: Strengthening Partnerships for Equitable Growth, highlighting HTA’s approach to building effective employer partnerships. WORKCON showcased innovative programs and collaborations led by Workforce Development Boards, community-based organizations, educational institutions, WIOA partners, and others committed to advancing equity and opportunity in underserved communities.

HTA Awarded State of California Grant to Connect Opportunity Youth with Apprenticeships
HTA is proud to be a recipient of a new California Opportunity Youth Apprenticeship (COYA) grant from the California Department of Industrial Relations (DIR) and its Division of Apprenticeship Standards (DAS). This $570,000 award will strengthen HTA’s best-in-class Registered Apprenticeship Programs for Line Cooks and Barista/Latte Artists—providing opportunity youth, often disconnected from school or work, with a clear pathway to upward mobility and higher wages. At the same time, the program helps close equity gaps across the state. This investment supports Governor Newsom’s Master Plan for Career Education by expanding youth apprenticeships, enhancing high school-to-career pathways, strengthening workforce training, and deepening regional partnerships in local communities.

HTA’s Barista/Latte Artist Apprenticeship Program—the first of its kind in the country—helps to brew careers, one cup at a time. We hosted our first community open houses, welcoming community-based organizations, faith-based, business leaders, and elected officials to hear from our instructors and students about the program and their experience. And our guests were treated to custom drinks at the HTA Mock Café, where our students practice taking orders, mastering pour-over techniques, and perfecting latte art. “Where I grew up, the options felt limited; and I made choices that led me to serve eight years in prison. When I got parole, I promised myself I would find a new path. Thanks to the GEO Reentry Program, I found HTA—and everything changed. I found hope and people who believed in me, and I graduated from the HTA Program. The HTA helped place me as a Culinary Specialist at USC. I have freedom. I learned great technical culinary skills. I have a future. It wasn’t easy. There were days I wanted to quit, but I kept going because I knew it would make my grandma proud. Today, I’m blessed by the second chance I was given and proud of the life I’ve built.”

Meet Barista Boss: Missy Mayhugh
Lead HTA Barista Instructor Missy Mayhugh doesn’t know what she would do without coffee. She started working in cafes more than 20 years ago and has advanced her career in the industry as a barista, manager, consultant, and Specialty Coffee Association-certified trainer. An award-winning coffee mixologist and latte artist, Missy now serves as a Head Judge for the U.S. Barista Championships, “the U.S. Open for barista competitions,” and contributes to the Competitions Working Group, advancing training and standards for the industry. Java Journeys Begin at the HTA Barista Lab
Starting a career in coffee can be challenging, but HTA’s Barista/Latte Artist Apprenticeship Program—the first of its kind in the country—is helping to brew careers, one cup at a time. To hone their craft, our students run Mock Cafés, where they practice taking orders, mastering pour-over techniques, and perfecting latte art. From lavender and cinnamon lattes to white mochas with fresh whipped cream, they’re learning to create custom drinks with precision and flair.

Let’s Roll: Apprentices Hone the Art of Sushi-Making
HTA is invested in the long-term success of our students. Two dozen graduates of our Line Cook Registered Apprenticeship Program assembled at the HTA Kitchen in Koreatown to learn the art of sushi-making. They put on tenegui headbands and learned to prepare an array of sushi, cut rolls, hand rolls and authentic sushi rice, and mastered the techniques that produce the raw fish creations. Everyone went home with their own sushi-making kit to hone their craft.

In March, we welcomed government, employer, workforce development, labor and community partners to our Koreatown kitchen for our Spring Community Buffet. We were joined by Speaker of the California Assembly Robert Rivas, Assemblymembers Rick Chavez Zbur and Lisa Calderon, employer representatives from USC, The Ritz-Carlton and JW Marriott at LA Live, Disneyland, Levy and CREWS at LAX, Los Angeles County Federation of Labor, and UNITE HERE Local 11, among many others. Our Line Cook apprentices prepared a delicious feast and we recognized many recent graduates who now work in leading kitchens throughout Greater Los Angeles.

This spring, Gregg Irish retired as Executive Director of the City of Los Angeles’ Workforce Development Board. HTA was proud to honor Gregg for his exceptional leadership, advocacy for those most in need, and decades of service to the City of Los Angeles and the workforce development system. In September, Governor Newsom signed AB 2378 into law! Authored by Assemblymember Lisa Calderon and sponsored by the HTA, the new law will allow us to start our first bartender cohort. The law allows participants in a registered bartending apprenticeship program to taste, in very small amounts, an alcoholic beverage for educational purposes. Taste-testing their creations in class is an essential part of learning the bartending craft and will help us equip bartenders and mixologists with the skills they need to excel with our hotel, event and sport venues and airport partners.

Over the last decade, HTA has placed more than 200 graduates into good union jobs at Dodger Stadium…and our alumni working at the Stadium celebrated our hometown heroes every night of the World Series in October! We even had an epic UNITE HERE Local 11 (LA) vs. UNITE HERE Local 100 (NY) bet going – and LA scored big. Go Blue!

LA City Council and HTA Celebrate National Apprenticeship Week
In honor of the 10th Annual National Apprenticeship Week, the Los Angeles City Council recognized the HTA and proclaimed the week of November 17-23, 2024 – National Apprenticeship Week, celebrating the theme “Expanding Registered Apprenticeship to Underserved Populations.” HTA hosted a reception for almost forty graduates of the Line Cook Registered Apprenticeship Program and presented certificates with leaders from the US Department of Labor, Los Angeles County Department of Economic Development, State of California Division of Apprenticeship Standards, Los Angeles Unified School District, UNITE HERE Local 11 and employer representatives from USC, Legends at SOFI, Hyatt Regency LAX, and CREWS at LAX.

“Before I came to the HTA, I had just graduated from high school and was unsure about my future. When the Farmer John’s plant closed and my mom Cristina lost her job, we discovered the HTA at a Good Jobs Fair and applied together to the Spanish Line Cook class – and we were both accepted! The HTA taught me how to cook professionally and for free. Every day was a new challenge, and the instructors helped me move forward and achieve my goals. Training and working with my mom at USC has been a gift. If someone is thinking about applying to the HTA, I say: do it. I’m very glad I took this opportunity.”
